Thewhite grapes are slowly pressed, extracting only the first fraction ofthe must — the purest and most expressive. The Pinot Noir, vinifiedas a white wine, is pressed under very gentle pressure, so theberries remain intact, and the free-run juice does not come incontact with the skins, preserving its characteristic freshness andfinesse.The three musts are then blended and subjected to natural bottlefermentation for a few months at a controlled temperature of 12°C.Afterwards, the wine is aged on lees for 12 months, developing acomplex aromatic profile and a fine, elegant effervescence lastingup to 1–2 hours.Tasting notes: The sparkling wine delights in the glass with a subtle,bright pale green color. Its delicate aromas of ripe apples with finebrioche notes lend a distinctive elegance. The taste is balanced andwell-structured, with hints of walnut and refreshing green applenotes, harmoniously intertwined in a fresh and refined finish.Food Pairing: It can be enjoyed as it is or paired with lightappetizers, creamy cheeses such as brie or camembert, fish,seafood, Asian dishes, and desserts like cheesecake or fruit tarts.
